Last night I tried to make potato salad for the first time and I wasn't at all satisfied with how it came out. I think I should have cooked the potatoes longer, I don't think I used the right kind of potatoes and the seasoning just didn't do it for me.

You need waxy potatoes for this, like red potatoes or Yukon Gold. Baking potatoes will turn to mush.

Also, this is what I do: use a mixture of 1/2 mayonnaise, 1/2 sour cream, salt, pepper, onion powder, and a few spoons of brine from a pickle jar. Good luck!

um, i used Yukon Gold.
I have no idea where I'm going to get an empty pickle jar from as I don't eat pickles. Also, I never add salt to my food. I'm in a couple of risk groups for high blood pressure. I'm overweight and my mom has high blood pressure. I'm oversensitive to very salty food. I use spices and herbs and things like that to season my food instead of salt.

I use red potatoes, I put some sugar in the water but you really have to watch them so they don't over cook. That's the hardest part about making potato salad. After they've cooled a bit I cut the up into chunks, add mayo just to coat, chopped scallions and dill. Excellent!

they weren't overcooked, they were a little undercooked. i did use dill.
