Had a few interesting surprises last night, including hearing from some of my great friends whom I hadn't heard from in a while, one of whom came over to give me some terrific presents of some DVDs and a bunch of delicious homemade chocolate muffins. :)

I use the recipe in Moosewood Cooks at Home, which is easy, fast and very flexible. My favorite combination is dark cocoa powder (I think the kind we get in Europe is different), banana and pear.
The key ingredient is my non-stick muffin tin which makes the final cleaning much easier.

That happened when making 24 pear+chocolate muffins: halfway through peeling and chopping the pears I got bored and switched to bananas instead.
My other favorite combination is apple+walnuts+cinnamon, which has the advantage that my kids don't eat it :-). On the other hand, there's the usual peel-and-chop work.
I'm the laziest cook ever.
