I am baking pumpkin bread right now and it's taking longer than I'd like. It's been in the oven for over an hour and it was still raw in the middle last I checked, which wasn't that long ago. I did a little experimenting with it and put Chinese 5 spice in it.

I've always felt that pumpkin bread took longer to bake than carrot cake, although you wouldn't think it would.

I love carrot cake but I've never made it. Shredding all those carrots seems like a pain in the butt.
